Just like fruits and vegetables, honey is a seasonal “crop”. The bees forage for pollen in the spring and early summer during what beekeepers call the “honey flow.” Once the bees fill a frame with honey and cap the cells with wax, the honey frames are ready for extracting. Some beekeepers extract again in the early fall but we leave that late summer honey for the bees to eat during the winter.
After the honey is extracted, it is ready to be poured into jars and sold. Since summer is the only time during the year that we extract honey from the hives, once this crop has been sold there won’t be any more honey available until the following summer.
